[Material (for one sheet)]
・ 1 chicken breast
◎ Garlic tube about 6 cm
◎ Mayonnaise tablespoon 1
◎ Soy sauce tablespoon 1
・ Potato starch tablespoon 3
① Cut the thick part of the chicken breast with scissors and flatten it
② Knead ◎ on both sides and apply potato starch evenly
③ Place the skin side down, add oil and fry both sides over medium heat
Estimated time is about 6 minutes after the oil is squishy on the skin, about 4 minutes after turning over

「鶏胸肉って安いけど、パサつきがち…」って思ってた私が、最近いちばん頼ってるのが“10分で完成するワンパン鶏むね”です。夜ご飯のメニューが決まらない日でも、冷蔵庫に鶏胸肉さえあれば気持ちがラクになります。 まず、爆速でおいしくするコツは3つだけ。 ①厚みを均一にする:分厚いところを開いたり、拳で軽く叩いて1cmくらいに。火の通りが一気に早くなります。 ②下味に「マヨ or 酒」を入れる:マヨはコクとしっとり感、酒はふっくら感が出て、むね肉がジューシーに。にんにく醤油タツタの“マヨ+醤油+にんにく”は、準備がこれだけで完了するのが神でした。 ③片栗粉は薄く均一に:ザクザク感が欲しい時は2度付けもあり。焼いてる間は触りすぎない方が衣がはがれにくいです。 照り焼きタツタは、私は「先に揚げ焼き→一度取り出す→タレを煮立てて戻す」の流れが失敗しにくかったです。フライパンの油を軽く拭き取ってからタレを入れると、味がぼやけず甘辛がしっかり絡みます。もし“てりやきチキンフィレオ風”っぽくしたいなら、タレを少し濃いめにして、仕上げにマヨをちょい足しすると満足度が上がりました。 「夜ご飯メニューどうしよう」に備えて、献立の組み合わせもメモしてます。 ・にんにく醤油タツタ+千切りキャベツ+味噌汁(最短) ・のり塩スティック+サラダ+コンソメスープ(子どもも食べやすい) ・照り焼きタツタ+卵スープ+ごはん(がっつり) あと、たまに検索で見かける“パートブリック包み”は、薄い生地で具材を包んで焼く(揚げる)料理。もし家にパートブリックがあるなら、照り焼き味の鶏むねを細切りにしてチーズと一緒に包んで焼くと、外はパリッと中はジューシーで、おつまみにも夜ご飯にも使えます。時間がある日にアレンジとしてぜひ。
