Healthy Chicken Burrito in Minutes 🌯
If you’re looking for a high-protein lunch or dinner that actually keeps you full, this chicken burrito has been one of my go-to meals lately. It’s creamy, flavorful, packed with protein, and comes together in under 20 minutes.
What I love most about this recipe is that it feels like comfort food without being overly heavy. The seasoned chicken, fresh veggies, and basmati rice create the perfect balance of flavor and texture. I also like to lightly grill the burrito at the end, it helps seal everything inside and gives it a delicious crispy finish.
✨ Ingredients
• 1 chicken breast, diced
• Salt & pepper
• Paprika
• Taco seasoning
• Onion powder
• Garlic powder
• 1 tbsp tomato paste
• ½ cup heavy cream
• ½ tomato, chopped
• 3 lettuce leaves, chopped
• ½ cup basmati rice
• 1 tortilla
• A little oil for grilling
👩🍳 Instructions
1. Dice the chicken breast and season it with salt, pepper, paprika, taco seasoning, onion powder, and garlic powder. Add the tomato paste and heavy cream, then mix well. (P-2)
2. Cook ½ cup of basmati rice. (P-5)
3. Chop ½ tomato and 3 lettuce leaves. (P-4)
4. Cook the chicken in a skillet until fully cooked, being careful not to overcook it so it stays juicy. (P-6)
5. Lay a tortilla flat and add all the ingredients, starting with the rice, followed by the chicken, tomato, and lettuce. (P-9)
6. Roll the tortilla tightly into a burrito.
7. Lightly grill the burrito in a skillet with a little oil, just enough to seal it so it doesn’t open up.
