Cheesy Beef Enchilada Bake
Ingredients 🛒
1 lb (450 g) ground beef (or ground chicken/turkey)
1 small onion, finely diced
2 cloves garlic, minced
1 packet taco seasoning (or 2 tbsp homemade seasoning)
1 cup tomato sauce (or enchilada sauce)
8 medium flour tortillas
2 cups shredded cheese (cheddar, mozzarella, or Mexican blend)
1 cup sour cream
1 cup cream cheese, softened
2 tbsp butter
2 tbsp flour
1 ½ cups milk (warm)
Salt & pepper, to taste
Fresh parsley or cilantro, chopped (for garnish)
Directions 🍴
1. Prepare the Beef Filling
1. Heat a skillet over medium heat, add the ground beef, and cook until browned.
2. Drain excess fat, then add onion and garlic. Cook until soft and fragrant.
3. Stir in taco seasoning and tomato sauce/enchilada sauce. Let simmer for 5–7 minutes until slightly thickened. Remove from heat.
2. Make the Creamy Cheese Sauce
1. In a saucepan, melt butter. Whisk in flour and cook for 1 minute.
2. Gradually whisk in warm milk until smooth and thickened.
3. Stir in cream cheese and half of the shredded cheese until melted and creamy. Season with salt and pepper.
3. Assemble the Bake
1. Preheat oven to 375°F (190°C).
2. Lightly grease a baking dish.
3. Place a spoonful of beef filling in the center of each tortilla.
4. Add a drizzle of the creamy cheese sauce, then fold tortillas into little pockets (like in the picture).
5. Arrange them seam-side down in the baking dish.
6. Pour remaining cheese sauce on top and sprinkle with the rest of the shredded cheese.
4. Bake
Bake uncovered for 20–25 minutes, or until golden brown and bubbly on top.
5. Serve
Garnish with chopped parsley or cilantro.
Serve hot with sour cream, salsa, or guacamole on the side.
