This is key for a crispy crust! Then, I season generously with salt, black pepper, garlic powder, and a touch of paprika. For that classic fried texture, I like to do a simple dredge: first in seasoned flour, then a quick dip in an egg wash, and finally back into the flour. This double-dredge really helps create an amazing, golden-brown crust. When frying, make sure your oil (I usually use vegetable or canola oil) is at medium-high heat, hot enough to sizzle but not smoke. Place the coated chops in the hot oil, being careful not to overcrowd the pan. Cook for about 4-6 minutes per side, depending on thickness, until they’re golden brown and cooked through (internal temperature of 145°F or 63°C). The smell alone is enough to get your taste buds going! Now, for those irresistible mashed sweet potatoes. They're so easy and add a lovely sweetness to balance the savory pork.
