Recently, I focused on using lean proteins like baked and ground chicken, which pair perfectly with nutrient-packed veggies and complex carbs such as sweet potatoes and black beans. One of my favorite combinations was baked chicken with sweet potato cubes and mushrooms. The sweetness of the potatoes complements the savory chicken beautifully, and sautéed mushrooms add an earthy depth. I find this meal satisfying and easy to heat up for lunches or dinners during busy days. Another meal prep that worked well involved ground chicken seasoned with taco spices, mixed with black beans and steamed broccoli. The spices add a kick that keeps the meals exciting, while the fiber from beans and broccoli helps sustain energy throughout the day. For added variety, I also prepped diced chicken with sweet potato cubes and a mix of colorful vegetables like carrots, squash, and red bell peppers.
