This light + refreshing Cucumber Salad is my new favorite meal prep! Ready in just 10 minutes, no stove needed—perfect for busy weeks or sunny picnic lunches. 🌞🥗
✨ Recipe (4 servings):
1 medium cucumber, chopped into ½-inch cubes
½ medium red onion, halved + thinly sliced
1 cup cherry tomatoes, halved
⅛ tsp salt
⅛ tsp black pepper
1 Tbsp olive oil
2 Tbsp red wine vinegar
2 Tbsp fresh dill, chopped
½ cup crumbled reduced-fat feta
