~Prep: Wash potatoes and peel if desired. Thinly slice them crosswise 3/4 of the way down, keeping the base intact.

🧂~Season : Arrange in a baking dish and gently fan them out. Season with salt, butter, and herbs.
(I melted a butter mixture and poured it all over the potatoes with garlic, onion powder, rosemary, thyme, and parsley.)
~Bake: Bake for 50 minutes, then place cheese slices in between each slice. Continue baking for 10-15 minutes until tender, golden, and melted.
