Butternut & Sweet Potato Soup 🥣 🍠

This is my first time trying butternut squash…. && idk how i feel about it 😅! The bacon added a nice crunch 🥓 For this soup you need a lot of seasoning for it to actually taste like something, so taste as you go!! Don’t be like me & over salt it 🤦🏽‍♀️

Ingredients :

✨ 1 Butternut Squash ( peeled & cut into cubes

✨ 2 Sweet Potatoes ( peeled & cut into cubes )

✨ 1 Yellow Bell Pepper ( diced )

✨ 32 oz of chicken stock

✨ Oregano, Basil, Sage, Garlic Powder, Onion Powder, Sea Salt, Cracked Black Pepper, Chili Flakes - to taste

✨ Bacon ( small diced )

Instructions:

💥 In a large pot, boil the butternut squash, sweet potato & bell pepper cubes until softened!

💥 Strain out the water and move veggies into a blender with 1/2 of the chicken stock! Blend until smooth!

💥 Pour soup back into pot, add the rest of the chicken stock ( more or less depending on how thick you like your soups) & season to taste! ( little at a time, taste as you go )

💥 In a separate pan, cook bacon pieces until crispy & put onto a paper towel to soak up the grease!

💥 Top your soup with bacon pieces!
