Red Velvet Pound Cake ❤️🍰
This red velvet pound cake was soo moist! I kind of overmixed it trying to make sure it was red enough & that caused the top to be a little crispy ( learn from my mistakes 😅 ) the icing really helped soften the top!! Other than that, I’ll give this cake 8/10🌟
Red Velvet Pound Cake Ingredients:
✨ 3/4 cup Vegetable oil
✨ 1/2 cup Butter ( melted )
✨ 2 cups Sugar
✨ 2 Eggs
✨ 1 cup Milk
✨ 1 tbl Vanilla
✨ 1 1/2 tbl White Vinegar
✨ 2 tbl Red Food Coloring
✨ 2 1/2 cups AP Flour
✨ 3 tbl Cocoa Powder
✨ 1 tsp Baking Soda
✨ 1 tsp Salt
✨ 1/2 cup Chocolate Chips
💥 Preheat oven to 350°
💥 In a mixing bowl, mix together vegetable oil, butter, & sugar, set aside
💥 In another bowl, mix together eggs, milk, vinegar, vanilla & food coloring, then add to the mixing bowl with oil & sugar
💥 In another bowl mix together flour, cocoa powder, salt, & baking soda, fold into the mixing bowl with other ingredients a little at a time, don’t over mix!
💥 Stir in chocolate chips!
💥 Grease a pan with oil & dust with flour, pour in the batter
💥 Bake for 60 minutes, allow to cool at least 30 minutes before adding the icing
Icing Ingredients:
✨ 4 oz Cream Cheese
✨ 2 cups Powdered Sugar
✨ 1 tbl Vanilla
✨ 2 tbl Lemon Juice
✨ Milk ( possibly )
💥 In a mixer, beat cream cheese into smooth
💥 Add powdered sugar, mix until combined
💥 Add in vanilla & lemon juice
( if too thick add in milk 1 tablespoon at a time, if it’s too thin add more powdered sugar )
