Stuffed Peppers 🫑

First home cooked meal of 2025!! Chicken & rice stuffed peppers!! 🍗🍚🫑🥰

Ingredients:

✨ Chicken Breast ( small diced)

✨ 1 tbl minced Garlic

✨ 1 Onion ( small diced )

✨ 1 cup White Rice

✨ 1/2 Chicken Bouillon Cube

✨ 2 cups Hot Water

✨ Salt, Pepper, Thyme, Old Bay, Onion Powder, Paprika, Cumin — To Taste

✨ Bell Peppers

✨ Shredded Cheddar Cheese

💥 In a large pan, brown the chicken

💥 Add in onion & garlic

💥 Stir in the rice

💥 Drop bouillon cube into the hot water, mix until dissolved then add to pot

💥 Put on lid & let simmer for 15-20 minutes ( stir occasionally to make sure it doesn’t stick to the bottom of the pot, cook until rice is al dente - should be fully cooked but not mushy )

💥 Season to taste

💥 Cut bell peppers in 1/2, take off the top, all the seeds & the white parts

💥 Scoop filling into each bell pepper, cover with foil

💥 Bake at 350° for 25 minutes

💥 Remove from oven, take off foil, add cheese & broil until cheese is browned ( about 5 minutes )
