Brown Stew Mutton😋
Went against culture a bit with this one, but the flavor didn’t disappoint 😋 10/10 would recommend
Marinated overnight (or at least 2 hrs if rushing) with:
🫑 Bell peppers
🌿 Thyme & scallion
🧅 Onions & garlic
🧂 All purpose + chicken seasoning, Old Bay, salt
🍯 Touch of browning for color
🔪 Pressured the meat till tender, let it spring its own juices then added water as needed.
🌶️ Finished off with more fresh herbs, bell peppers, onions, carrots & broad beans.
🥘 Cooked down until the gravy was thick and rich.
Serving up comfort in every bite 🤎
If you’re interested in exploring variations like Elizabeth Mutton, here’s what I found helpful: Elizabeth Mutton is another style of Jamaican mutton stew, often incorporating slightly different spice blends or cooking techniques. Adding a touch of browning sauce or even some curry powder can elevate the flavor profile. Marinating the meat overnight really helps the seasoning penetrate deeply, making the mutton extra flavorful and tender after pressure cooking. I’ve also experimented with using fresh thyme and scallions for a vibrant herbal note, which complements the rich gravy beautifully. Serving brown stew mutton with traditional sides like rice and peas or fried dumplings enhances the comfort factor. Also, don’t hesitate to adjust the seasoning according to your taste preferences, perhaps increasing the Old Bay or all-purpose seasoning for a bolder flavor. Overall, experimenting with the spices and cooking times while keeping the core ingredients — bell peppers, onions, garlic, and quality herbs — will give you that perfect balance between authentic and personalized mutton stew.
