Aldi pork chili -3 ingredients and so easy!

I did not intend to post this today. I had a cute cat photo to share. But I had soaked some red pinto beans overnight to make taco soup - realized I had no ground beef - then decided not to venture out.

But this is so dang good, I had to post. I hope other #aldifans see this.

I did have this @Aldi pork shoulder that was pre seasoned. So I defrosted it all morning, threw it in the #instantpot to slow cook all afternoon, then threw in a small can of Aldi tomato sauce, about 16 ounces of water, then rinsed and dropped in two pounds of beans. Slapped the lid back on, set the pressure cooker function to 35 minutes and popped some cornbread in the oven while I waited.

Kiddo came in and immediately asked what smelled so good.

No spices needed, no extra broth, no onions - just the pork, beans and a little can of tomato sauce. Doesn’t even need salt.

Y’all gotta try this. I’ll try to take an aesthetic photo when my hub gets home and I fix his bowl. lol!

Just remember to soak them overnight like I did, or if you're in a pinch, the quick-soak method works too (boil for a few minutes, then let stand for an hour). And that 'Carnitas Seasoned Boneless Pork Shoulder Roast'? It's a hero ingredient! While it was perfect for my chili, I've also shredded it for tacos, sliders, or even just served it over rice with a side of steamed veggies.
