It's one of those meals that just brightens your morning and keeps you full for hours. First things first, let's talk about the star: the salt fish (or cod fish). The most important step, which many beginners overlook, is desalting it properly. You really don't want a salty surprise! What I usually do is soak mine overnight, changing the water three to four times. If you're short on time, you can boil it in fresh water for about 15-20 minutes, then drain and repeat once or twice until it tastes just right. Once it's desalted, I flake it apart – it's so satisfying to see it break into tender pieces! Next, for the vegetarian baked beans, I typically go for a good quality canned version. They're quick, convenient, and provide that perfect sweet and savory contrast that balances the salt fish so well. While the salt fish is doing its thing (either soaking or boiling), I get my aromatics ready. I love sautéing finely chopped green and red bell peppers along with some sliced onions until they're soft and fragrant. This adds such a vibrant flavor and beautiful color to the dish. Sometimes, if I'm feeling brave, I'll even throw in a tiny piece of scotch bonnet pepper for a little kick, but that's totally optional if you prefer a milder taste. Once my veggies are tender, I add the flaked salt fish to the pan and let it brown slightly, absorbing all those lovely flavors from the peppers and onions. Then, in go the baked beans! I gently stir everything together, letting it simmer for a few minutes so all the flavors can meld beautifully. I usually serve my salt fish and baked beans with some warm, toasted bread or fried dumplings. It’s also amazing with a side of ripe avocado or even some boiled provisions like green banana or yam, if I’m feeling extra traditional and want a truly authentic Caribbean breakfast. For a delicious twist, I've seen people add a little bit of ackee, which makes it even more authentic and delicious!
