Ingredients:

2 Chicken breasts

Bread crumbs

Corn starch

Corn meal

2 eggs

Cheddar broccoli rice

1 Can of corn

Crisco Oil

Recipe👩‍🍳:

In a pot start heating up your oil, while that is heating up cook your chicken into whatever size you like!

Grab two bowls, in one bowl add your corn meal, bread crumbs, and corn starch (this adds the crunch to your breading!) In the other bowl scramble two eggs

With one hand coat the chicken in the eggs then transfer to the bread bowl, with your other hand coat your chicken with the bread mixture

Optional repeat that step for more of a southern style fry

Check to see if your oil is hot enough with a wooden spoon, you should see bubbles appear around the spoon!

Carefully set your coated chicken into the oil for 11 minutes!

While your chicken is cooking go ahead and follow the rice instructions and cook your corn!

When the chicken is ready to come out set it on a paper plate with paper towels, so some of the oil gets soaked up!

Serve and enjoy! 😋

When breading your chicken, the combination of cornmeal, breadcrumbs, and corn starch is a great trick to achieve that extra crispy texture reminiscent of southern-style fried chicken. Using two hands to dip the chicken first in the egg wash and then in the breading mixture helps the coating stick better, especially if you repeat the process for a thicker crust. One tip I’ve found useful is to carefully monitor the oil temperature by placing a wooden spoon in the hot oil; once bubbles form around the spoon, it’s a good indication the oil is ready. This helps prevent the chicken from absorbing too much oil and becoming greasy. Also, letting the fried chicken rest on paper towels after frying is crucial to soak up excess oil and keep the crust crisp. Pairing this with Knorr's cheddar broccoli rice mix adds a flavorful and creamy side without extra prep time, which keeps the meal both simple and delicious. Cooking the canned corn according to your taste — whether heated or lightly sautéed with a bit of butter and seasoning — brings a lovely sweet contrast to the savory fried chicken. Overall, this recipe combines convenience and flavor, ideal for anyone craving homemade fried chicken that doesn’t take hours. It’s great for family dinners or casual get-togethers, and leftover chicken can be repurposed for sandwiches or salads the next day!
