... Read moreOkay, so you've seen my previous posts about getting our salmon ready, but now for the star of the show: the stuffing! This creamy spinach and cream cheese blend is what makes my viral stuffed salmon truly irresistible. For my version, I start by sautéing some fresh spinach – I usually use about 5-6 cups packed, which cooks down to a perfect amount for 2-3 salmon fillets. Once it's wilted, I make sure to squeeze out all the excess water. This is a crucial step to avoid a watery stuffing! Then, in a bowl, I combine about 4 ounces of softened cream cheese with the spinach. I love adding a clove or two of minced garlic, a pinch of onion powder, a dash of dried dill (it pairs beautifully with salmon!), and a generous sprinkle of Parmesan cheese. Sometimes, if I'm feeling fancy, I'll throw in a bit of sun-dried tomato for a lovely Tuscan touch – perfect if you're looking for that 'Tuscan stuffed salmon' vibe! A little salt and pepper to taste, and voilà, your delicious, creamy filling is ready. It's so simple, but trust me, the flavor is out of this world! Now that our beautiful salmon fillets are stuffed with that amazing mixture (you can either make a pocket or spread it on and roll them up, depending on the cut!), it's time to get them in the oven. I preheat my oven to 400°F (200°C). I usually drizzle a little olive oil over the salmon and season the outside with salt, pepper, and a sprinkle of paprika for color. Then, I bake them for about 15-20 minutes, or until the salmon is flaky and cooked through. The cooking time really depends on the thickness of your salmon, so keep an eye on it! For an extra golden finish, I sometimes pop it under the broiler for the last 2-3 minutes, just until the top of the stuffing gets slightly caramelized and the salmon skin crisps up a little. This final step is key to making it look as good as it tastes! So you've mastered the stuffing and baked your salmon to perfection – what next? A great meal isn't complete without the perfect side dishes! For my viral stuffed salmon, I love to keep it fresh and light. A simple roasted asparagus or green beans tossed with a little lemon juice and garlic is always a winner. If I want something a bit more substantial, a light quinoa salad or some fluffy wild rice complements the richness of the salmon beautifully. For a touch of comfort, mashed potatoes (or even mashed cauliflower for a lighter option) are always a good call. And don't forget a fresh side salad with a vinaigrette dressing – the acidity cuts through the richness of the cream cheese wonderfully. Experiment and find what you love, but these are my go-to's for a truly unforgettable salmon and spinach meal!
