EVERYTHING I PREPPED FOR MY FAMILY THIS WEEK
As a busy mom, I swear by meal prepping to keep my family fed and happy throughout the week! It truly takes the stress out of daily cooking, and it's amazing how much time you save when you have delicious, homemade options ready to go. This past week, I went all out, and I wanted to share some of my favorite preps and why they work so well for us. First up, those cottage cheese egg bites? Absolute breakfast heroes! They're packed with protein, super easy to whip up, and perfect for a grab-and-go morning. I usually bake a big batch and store them in the fridge for quick breakfasts or even a healthy snack. For something a bit heartier, I made a huge batch of potato and mushroom vareniki. These handmade dumplings are such a comforting meal, and the best part is they freeze beautifully. I can just pull out a portion, boil them, and have a delicious dinner ready in minutes. It's a fantastic way to enjoy homemade comfort food without the daily effort. And for gut health, my homemade sauerkraut is a must! It might sound intimidating, but honestly, shredding cabbage, julienning red bell peppers, grating carrots, and chopping celery and garlic, then fermenting it, is quite simple. It adds a wonderful tangy crunch to so many meals. Of course, we can't forget the drinks! I juiced a big batch of morning green juice and orange pineapple juice, plus some mighty immunity shots. Having fresh, nutrient-packed juices ready means we start our day right, and those little shots are perfect for a quick health boost, especially during colder months. Snacks are crucial for keeping hunger at bay, and my pumpkin oatmeal balls are always a hit. They're sweet, satisfying, and much healthier than store-bought options. Another family favorite are the scones – this week I made chocolate, pumpkin, and even some savory jalapeño cheddar ones! They make for perfect afternoon treats or a quick breakfast alongside a cup of coffee. Finally, a big pot of creamy chicken pot pie soup is a lifesaver for dinners. It’s hearty, comforting, and I love that it lasts for several meals. Just reheat and serve with some crusty bread! My top tip for successful meal prep, especially when you're making such a variety, is to plan ahead. Look at your week, see what meals you want, and then designate a few hours on one day (for me, it's usually Sunday) to get everything done. Focus on batch cooking items that can be repurposed or frozen. Invest in good quality containers to keep everything fresh. Having everything ready not only saves time but also helps us eat healthier and reduces food waste. It’s truly a game-changer for a busy household!
