I cut the full recipe is cut in half besides the chicken, so it’s perfect for one with left overs. It would feed two people with little leftovers. If you’re serving 4 then double the amounts 😊 The left over chicken is perfect for a salad the next day! 🥗
1 pkg Trader Joe’s Pesto Chicken (will have leftovers)
1/2 bag Ben’s Original Basmati Rice
1/2 bag Steamed Broccoli
2 tbsp Butter
1/2 cup Half & Half or Heavy Cream
1/4 cup Parmesan Cheese
Olive oil, salt, pepper, and Italian seasoning
1. Heat 2 tbsp of olive oil in a pot or frying pan and cook chicken according to package
2. Start Alfredo sauce while the chicken is cooking
3. Melt 2 tsp of butter in a medium sauce pan and add 1/2 cup of half and half or heavy cream and stir until cream starts to slightly bubble
4. Add Parmesan and stir until cheese is combined with the butter and cream then season with salt, pepper and Italian seasoning to taste
5. Once chicken is done cut or shred it and set it aside
6. Steam broccoli in the microwave or stove top and cook rice according to package
7. Plate with rice on bottom then add chicken & broccoli and top with Alfredo sauce and Parmesan cheese
8. Enjoy!
