Chicken, shrimp and spinach Alfredo

- 1 pound chicken breast, cut into bite-sized pieces

- 1/2 pound shrimp, peeled and deveined

- 2 cups fresh spinach

- 1 pound fettuccine pasta

- 3 cups heavy cream

- 1 cup grated Parmesan cheese

- 1 cup mozzarella cheese

- 3 cloves garlic, minced

- 2 tablespoons olive oil

- 2 tablespoons butter

- Salt, pepper, onion powder, garlic powder, complete seasoning, season all, Italian seasoning, and paprika to taste

- 1 lemon

1. Cook the Pasta:

- In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until al dente. Drain and set aside.

2. Cook the Chicken:

- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces, season with (seasonings above), and cook until fully cooked and browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.

3. Cook the Shrimp:

- In the same skillet, add another tablespoon of olive oil. Add the shrimp, season with (seasonings above), and cook until they turn pink and opaque, about 2-3 minutes per side. Add a squeeze of fresh lemon juice. Remove the shrimp from the skillet and set aside with the chicken.

4. Make the Alfredo Sauce:

- In the same skillet, lower the heat to medium and add 2 tablespoons of butter, then minced garlic. Sauté until fragrant, about 1 minute.

- Pour in the heavy cream and bring to a gentle simmer. Let it cook for about 5 minutes, stirring occasionally.

- Gradually add the grated Parmesan cheese and mozzarella cheese, stirring continuously until the cheese has melted and the sauce is smooth. If the sauce is too thick, you can add a little pasta water to reach the desired consistency.

- Season with above seasonings

5. Combine Ingredients:

- Add the cooked chicken, shrimp, and fresh spinach to the Alfredo sauce. Cook for another 2-3 minutes until the spinach has wilted and everything is heated through.

- Toss the cooked fettuccine pasta with the sauce until well coated.

6. Serve:

- Garnish with freshly chopped parsley and additional Parmesan cheese if desired.
