Caramel Pecan Carrot Cake

For the cake

* 2 1/2 c All-purpose flour

* 1 1/2 tsp baking powder

* 1 tsp Baking soda

* 1 tsp Salt

* 2 tsp Ground cinnamon

* 1/2 tsp Ground nutmeg

* 1/4 tsp Ground ginger

* 1 c Granulated sugar

* 1 c Packed brown sugar

* 4 Large eggs

* 1 c Vegetable oil

* 1/2 c unsweetened applesauce

* 1 tsp vanilla extract

* 3 c grated carrots (about 6 medium carrots)

* 1 c Chopped pecans

Cream cheese frosting

* 8 oz softened cream cheese

* 1/2 c softened unsalted butter

* 4 c Sifted powdered sugar

* 2 tsp vanilla extract

* 1/4 tsp salt

Caramel Sauce (or just buy the one in the jar)

* 1 c Granulated sugar

* 6 tbsp unsalted butter cut into cubes

* 1/2 c heavy cream

* 1 tsp vanilla extract

* 1/4 tsp salt

Garnish

* 1 c toasted whole pecans

* Extra grated carrots (optional for decoration)

Prepare cake batter

* Preheat oven to 350*. Grease 2 9-inch round cake pans.

* Mix flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in a large bowl.

* In another bowl mix together granulated sugar, brown sugar, eggs, vegetable oil applesauce, and vanilla extract until smooth.

* Gradually combine wet and dry ingredients. Stirring until just combined.

* Gently fold in carrots and toasted pecans until evenly distributed.

Bake the cake

* Divide the batter evenly among the prepared pans.

* Bake for 25-30 min, or until a toothpick inserted into the center comes out clean.

* Let the cakes cool in the pans for 10 min, then transfer to a wire rack to completely cool.

Frosting

* In a large bowl, beat the cream cheese and butter together until creamy and smooth.

* Slowly add powdered sugar one cup at a time beating well in between cups.

* Stir in vanilla extract and salt. Refrigerate for 15-20 minutes if frosting is too soft.

Caramel sauce

* In medium saucepan heat the granulated sugar over medium heat stirring constantly until it melts into a thick amber liquid.

* Carefully add the butter.

* Slowly pour in the heavy cream while whisking continuously.

* Remove from heat and stir in vanilla extract and salt.

* Let cool some before using.

Cake Assembly

* Place one cake layer on serving plate and spread and even layer of frosting on top.

* Add second layer and repeat with frosting, and smoothing sides and top.

* Drizzle caramel sauce over the top.

* Garnish with whole or chopped pecans.
