Creamy peanut dressing + fresh crunchy veggies + noodles = perfect easy meal! I made this earlier in the week & it’s been great to have in the fridge for leftovers.
Peanut dressing:
— about 1/4 cup peanut butter
— 2 tbs soy sauce
— 1 tbs maple syrup
— 1 tsp sesame oil
— 1 tbs sriracha
— a minced clove of garlic or pinch of garlic powder
— juice from 1 lime
— water as needed to thin
Toss with veggies — I did carrots, edamame, & peppers — noodles, cilantro, and top with peanuts.
