Peach walnut salad

Just add walnuts for the perfect touch of sweetness and crunch to this peach summer salad!

Ingredients:

— Spinach or greens of choice for your base

— Fresh peaches

— Goat cheese, flour, egg, and, bread crumbs

— California walnuts, egg, maple syrup, brown sugar, cinnamon, and salt

— Dressing of choice

How-to: Preheat the oven to 300˚F.

1. Whisk together 1 egg & 1 tbs maple syrup. Toss with about 2 cups of walnuts.

2. In another small bowl, mix together 2 tbs brown sugar, a pinch of cinnamon, and a pinch of salt. Toss this mixture over the nuts and mix again.

3. Roast for 25 minutes, tossing halfway.

4. While the nuts roast, roll the goat cheese into small disks.

5. Dip in flour, then egg, then bread crumbs.

6. Add a drizzle of oil to a pan, and pan fry over medium-low, flipping once golden and crispy on the bottom.

7. Toss together greens, goat cheese, peaches, and nuts. Top with dressing.
