Pistachio Cookies

Pistachio cloud cookies: soft, cakey, fluffy, crinkle cookies with pistachio & almond.
Ingredients:
— 3 tbs olive oil
— 3/4 cup sugar
— 4 oz. Cream cheese, room temp
— 1 egg
— 1 tsp vanilla
— 1/2 tsp almond extract
— 1 1/2 cups flour
— 3/4 tsp baking soda soda
— pinch of salt
— 1/3 cup finely chopped pistachios
— powdered sugar to coat
How-to:
1. Add olive oil, sugar, cream cheese, egg, vanilla, and almond extract to a bowl. Whisk until well combined.
2. Add in flour, baking soda, salt, and pistachios and stir.
3. Chill for at least 30 minutes, and preheat the oven to 350˚.
4. Roll the dough in powdered sugar and top with extra crushed pistachios. Bake for 12-14 minutes.
