Potato Skins recipe

As promised, here is the potato skin recipe. This one is a little more of a sentimental recipe. My mamaw and I used to make these together when we watched TV on Sunday. She affectionately called them slabs. These are definitely not traditional potato skins, but they are a lot easier to make.

You'll need:

🥔 3 russet potatoes

🥓 Bacon bits

🧀 Your favorite shredded cheese

● Cooking spray & oil

● salt and pepper to taste

1.) Preheat your oven to 375°. Wash your potatoes well and begin slicing. I used a mandolin. If you don't have one, you can cut them into rounds with a knife all the same.

2.) Line a baking sheet with foil and spray with cooking oil. Place your potato rounds on the pan. Lightly drizzle the potatoes with cooking oil and season with salt and pepper. I used olive oil.

3.) Top your potatoes with bacon bits and then shredded cheese. It helps if you put the bacon first as the cheese will hold it on better.

4.) Bake for 10-15 minutes or until potatoes are soft and toppings melted.

5.) Serve immediately with ranch dressing or sour cream.
