Cozy recipes| one pan chicken, broccoli, and rice!

Dinner under an hour✨

Ingredients:

Chicken thighs (I used bone in, but boneless can be used)

Frozen broccoli 🥦

Any rice (I used yellow)

A sprinkle of cheddar cheese 🧀

Instructions:

1. Season chicken thighs as you like, and sear them in a cast iron skillet until golden brown.

2. Remove the chicken and set it aside, keeping the flavorful drippings in the pan.

3. Add 1 tbsp of butter to the skillet, then stir in 1 cup of rice to toast lightly.

4. Pour in 2 cups of water, then add broccoli, shredded cheese, and the seared chicken back to the skillet.

5. Bake at 375°F for 45 minutes, or until most of the water has evaporated and everything is perfectly cooked.
