🧂 Blackened Salmon:

• 2 salmon fillets

• 2 tsp Cajun seasoning

• ½ tsp paprika

• ¼ tsp garlic powder

• ¼ tsp onion powder

• ½ tsp dried thyme

• ½ tsp black pepper

• Oil for searing

Directions:

Coat salmon in oil and seasoning. Heat skillet until hot, then sear salmon 3–4 minutes per side until perfectly blackened and flaky.

🦞 Crawfish Étouffée:

• 1 lb crawfish tails

• ¼ cup butter

• ¼ cup chopped onion

• ¼ cup chopped green bell pepper

• 2 cloves garlic, minced

• 2 tbsp flour

• 1 cup chicken broth

• ½ tsp Cajun seasoning

• ¼ tsp salt & black pepper

Directions:

1. Melt butter in a skillet. Sauté onion, pepper, and garlic until tender.

2. Stir in flour and cook 2–3 minutes for a light roux.

3. Gradually whisk in broth, then season.

4. Add crawfish tails and simmer until the sauce thickens.
