Preheat oven 400
Cut spaghetti squash in half and scoop out seeds
Sprinkle with olive oil, salt, and pepper
Poke with a fork outside of the squash
Cook for 30 minutes
In a baking dish:
Cherry tomatoes, olive oil, Italian seasoning, red pepper flakes, salt, and pepper
In the middle of the baking dish add goat cheese log
Bake for 25 minutes
Once tomatoes and goat cheese are baked:
Mix in chopped garlic and spinach
Use a fork to scrape out spaghetti squash and combine in the sauce.
