Molok3ia with baked chicken For the Chicken

4 pieces chicken, skin on

2 tbsp olive oil

Salt & black pepper (to taste)

1 tsp smoked paprika

1 tsp adobo seasoning

Juice of 1 lemon

1 packet Sazón seasoning

½ cup chicken broth

For the Molokhia Base:

2 tbsp olive oil

1 onion, finely chopped

4 garlic cloves, minced

1 tomato, finely diced

1 container chicken broth (like Kettle brand)

½ package frozen molokhia

3 cups dried molokhia leaves

Fried garlic

2 tbsp olive oil

1 handful minced garlic

1. Bake the Chicken

Preheat oven to 450°F.

In a bowl, coat chicken with olive oil, salt, pepper, smoked paprika, adobo, lemon juice, and Sazón.

Place chicken in a tray add ½ cup chicken broth.

Bake uncovered for about 45 minutes, until golden .

In a large pot, heat olive oil.

Add chopped onion and minced garlic, sauté until softened.

Stir in diced tomato and cook 5 minutes until softened.

Pour in chicken broth, bring to a boil .

Add frozen molokhia and dried molokhia, mix well.

Simmer over medium heat until thickened.
