Sweet, buttery, and nutty crescent cookies are a delightful reminder of the warmth Yule symbolizes with the return of the sun. These melt-in-your-mouth treats are super easy to make and perfect for any occasion. Whether for a holiday gathering or just a cozy afternoon snack, these cookies are sure to impress.

✨Ingredients✨

- 1/2 cup unsalted butter, softened (Room temp NOT melted!!)🧈

- 1/2 cup granulated sugar

- 1 large egg 🥚

- 1 tsp almond extract

- 1 tbps grated lemon peel 🍋

- 1 cup whole wheat flour

- 1 cup all-purpose flour

- 1/2 tsp baking powder

- 1/4 tsp salt 🧂

🌙Instructions🌙

1. Preheat your oven to 350°F. Line a baking sheet with parchment paper and lightly spray with a baking cooking spray.

2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

3. Beat in the egg, almond extract, and grated lemon peel until well combined.

4. In a separate bowl, shift and whisk together the whole wheat flour, all-purpose flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until a soft dough forms.

5. Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet. You can flatten each ball slightly with the palm of your hand or the bottom of a glass. Then, use a small crescent-shaped cookie cutter to lightly make an impression. Alternatively, you can roll the dough balls into long strips and shape them to look like crescent moons.🌙

6. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. [11 minutes seems to work perfectly for mountain level baking]
