• Ingredients: 1 baguette, cherry tomatoes, garlic, fresh basil, olive oil, salt & pepper
• Instructions: Slice baguette and toast in the oven until golden. Top with a mix of chopped cherry tomatoes, minced garlic, fresh basil, olive oil, salt, and pepper.
🥥 Coconut Curry Cauliflower Steak
• Ingredients: 1 head cauliflower (cut into “steaks”), 1/2 cup coconut milk, 1 tbsp curry powder, salt & pepper
• Instructions: Marinate cauliflower in coconut milk and curry powder. Roast at 400°F (200°C) for 25-30 minutes, flipping halfway.
🌱 Roasted Brussels Sprouts
• Ingredients: 2 cups Brussels sprouts (halved), 1 tbsp olive oil, salt & pepper
• Instructions: Toss Brussels sprouts in olive oil, salt, and pepper. Roast at 400°F (200°C) for 20-25 minutes until crispy.
🥣 Lentil Stew
• Ingredients: 1 cup cooked lentils, 1 carrot (diced), 1 celery stalk (diced), 1/2 onion (diced), 2 cups vegetable broth, salt & pepper
• Instructions: Sauté carrot, celery, and onion until softened. Add lentils and broth, simmer for 10-15 minutes until flavors meld.
