Perfect for a wholesome, plant-based dinner. Serves 2.

Ingredient 1 & Portion:

Boiled cabbage – 2 cups, chopped

Ingredient 2 & Portion:

Brown rice – 1 cup, cooked

Detailed Steps:

• Boil cabbage in salted water until tender, about 8–10 minutes. Drain and toss with olive oil and black pepper.

• Season cooked brown rice with smoked paprika, cumin, and garlic powder. Keep warm.

• Sauté black beans with onions, chili powder, oregano, and salt for 5 minutes.

• Fry plantain slices in oil until golden brown. Drain on paper towels.

• Serve with chopped tomatoes, sautéed green peppers, and sliced avocado.

Additional tips/notes:

• For extra flavor, try adding a sprinkle of nutritional yeast to the rice or black beans.

• Make sure to fry the plantains on medium heat to ensure they’re crispy on the outside and tender inside.
