Finding fresh lion's mane mushrooms can be a bit of an adventure, but thankfully, my local farmer's market had some beautiful, fresh specimens. They look so unique, almost like a fluffy, furry brain! Before cooking, the key is to clean them gently and then press out as much moisture as possible. This step is absolutely crucial for achieving that firm, meaty texture we're going for. I placed the whole mushroom between two cutting boards, then put something heavy on top (like a stack of cookbooks) for about 20-30 minutes. You'll be amazed at how much water comes out – this really helps prevent a soggy mushroom and gets it ready to mimic a steak. Next up, seasoning! I opted for a simple but flavorful blend: a good drizzle of olive oil, smoked paprika, garlic powder, onion powder, a pinch of cayenne for a little kick, salt, and freshly ground black pepper. You want to make sure every crevice of the lion's mane soaks up that flavor. Some people like to marinate them, but I found direct seasoning worked perfectly for a quick cook. Then, into a hot cast-iron skillet with a little more oil. High heat is essential to get that gorgeous, caramelized crust that adds so much to the steak-like experience. I cooked each side for about 3-4 minutes, pressing down gently with a spatula to ensure maximum contact with the pan, until they were golden brown and slightly crispy. It’s hard to believe this is just a mushroom! I served mine with some roasted asparagus and garlic mashed potatoes, and it was a truly satisfying meal that even my meat-loving friends enjoyed.
