NY STRIP STEAKS CREAMY MUSHROOM SAUCE & MASHED POTATOES
4 NY strip steaks
2 tsp kosher salt
1 packet Sazón
2 tablespoon cumin
2 tbsp olive oil
2 tbsp butter
2 garlic cloves, smashed
For the mashed potatoes:
2 lbs Yukon Gold or Russet potatoes, peeled and cubed
4 tbsp butter
½ cup warm milk or heavy cream
1 tsp Salt and pepper to taste
For the creamy mushroom sauce
1 lb mushrooms, sliced
2 tbsp butter
1 small shallot, finely diced
2 garlic cloves, minced
½ cup beef broth
1 cup heavy cream
1/4 cup grated Parmesan cheese
1 tsp Dijon mustard
Salt and pepper to taste
1 tbsp chopped parsley
Place potatoes in a pot and cover with cold salted water.
Bring to a boil and cook until fork-tender, about 15–20 minutes.
Drain well.
Mash with butter and warm milk or cream until smooth.
Season with salt and pepper. warm
Pat steaks dry and season generously with salt and pepper.
Heat olive oil in a large cast-iron skillet over high heat.
Sear steaks 3–4 minutes per side for medium-rare.
Add butter, garlic, and thyme during the last minute and baste the steaks.
Remove steaks and let rest for 10
In the same skillet, reduce heat to medium.
Add butter and mushrooms; sauté until browned, about 6–8 minutes.
Add shallot and garlic; cook 1 minute.
Pour in beef broth and scrape up the browned bits.
Simmer Reduce
Cook heavy cream, Parmesan, and Dijon mustard
5 minutes until thickened.
Season with salt and pepper. Stir in parsley
Spoon mashed potatoes onto each plate.
Top with a NY strip steak.
Generously ladle creamy mushroom sauce over the steak and potatoes.
