Veggie quesadillas
You guys, I've seriously found my new favorite weeknight meal: veggie quesadillas! They're so incredibly versatile, and you can pack them with so much flavor and goodness. I've been experimenting a lot lately, and I'm super excited to share my go-to recipe, especially for those of you looking for a delicious spinach paneer quesadilla or want to incorporate a fresh primavera mix. First things first, let's talk about the 'primavera mistura' – or as I like to call it, my vibrant spring veggie blend! This is where you can get really creative and use whatever seasonal vegetables you love. My personal favorites for a springtime quesadilla include finely diced bell peppers (red and yellow for color!), sweet corn kernels, tender asparagus tips, and sometimes even some thinly sliced zucchini. The trick is to sauté them lightly until they're just tender-crisp. You don't want them mushy, but you also don't want raw veggies in your quesadilla. A little olive oil, a pinch of salt and pepper, and maybe a dash of paprika or cumin really bring out their natural sweetness.
