Sardine Toast with Roasted Garlic Tomatoes 🧄🍅

Sardine toast… but make it irresistible!

Have you ever tried sardine toast this way before? Trust me, even if you don’t like the sardine smell, THIS will change your mind.

Ingredients (1–2 servings)

Roasted Garlic Tomatoes

1-2 cup cherry tomatoes

4-6 garlic cloves

1/4 cup olive oil

Pinch of salt

Toast

1–2 slices sourdough bread, toasted

1–2 cans of sardines

Fresh lime or lemon juice

Thinly sliced red onion

Chopped parsley (or soft herbs)

Chili oil, for drizzle

Salt + black pepper

Instructions

Roast Garlic Tomato → Combine cherry tomatoes, garlic, olive oil, and salt. Roast at 375°F (190°C) for 20–25 minutes, until soft, jammy, and slightly caramelized.

Toast the Bread → Toast sourdough until deeply golden and crisp, a sturdy base is key.

Build the Toast → Spread the softened garlic onto the toast, then spoon over the roasted tomatoes. Place whole sardines on top.

Finish

Squeeze fresh citrus over the sardines.

Season with a pinch of salt and black pepper.

Top with sliced red onion.

Drizzle with chili oil.

Sprinkle with fresh herbs.

My favorite way to use some of those late summer tomatoes. I roast tomatoes, shallot, garlic, and thyme until everything is caramelized and then add tons of fresh basil for an easy but delicious tomato soup. Pairing with a grilled cheese is a must! The full recipe is linked in my bio on my Substack
