Dinner Time: Salmon and Noodles!
One of my favorite go-to meals during a busy week is baked salmon with noodles, and it’s such a comforting, flavorful dish! This week, I made brown sugar salmon paired with red pepper and garlic noodles. The best part? It’s ready in just 20 minutes, with everything cooking at the same time. Quick, easy, and absolutely delicious!
Salmon:
• Preheat your oven to 425°F.
• Line a baking sheet with foil and lightly oil it.
• Place the salmon skin-side down, then rub with 2 tablespoons of brown sugar.
• Dot the salmon with 1 tablespoon of unsalted butter, cut into small pieces, and season lightly with salt and pepper to your taste.
• Bake for 20-25 minutes, depending on the size of your salmon fillet. Keep an eye on it – it’ll be perfectly tender when done!
Noodles:
• While the salmon is baking, boil your noodles.
• Mince 1 tablespoon of garlic (I use “jar-lic” which is the jarred pre-minced garlic for convenience).
• Once your noodles are done, drain and set them aside.
• In a large skillet, heat 3 tablespoons of vegetable oil.
• Add 1 tablespoon of red pepper flakes (adjust based on your spice preference) and immediately toss in the garlic and stir. Leave it on the heat just for a few seconds, 5-10 seconds max, until fragrant, but be careful not to let it burn!
• Remove from heat and toss in the drained noodles, making sure they’re evenly coated with that spicy, garlicky goodness.
Now, all that’s left is to plate your meal and dig in! If I’m feeling extra indulgent, I’ll pop some of those frozen garlic Texas toast in the oven to go alongside it, but make sure to use a separate baking sheet so the buttery salmon juices don’t mix. Simple, satisfying, and perfect for any weeknight!
