A light and smoky summer-perfect dish featuring juicy grilled salmon glazed in BBQ sauce, served with tender asparagus and fluffy quinoa for a clean and satisfying meal.
🛒 Ingredients
For the Salmon:
2 salmon fillets
2–3 tbsp BBQ sauce (your favorite kind – smoky, spicy, or sweet)
Salt & pepper
Olive oil for brushing
For the Asparagus:
1 bunch asparagus, trimmed
Olive oil
Salt & pepper
Squeeze of lemon juice (optional)
For the Quinoa:
1 cup quinoa
2 cups water or broth (for extra flavor)
Salt to taste
🔥 Instructions
Cook the Quinoa
Rinse quinoa well. In a pot, combine with water/broth and a pinch of salt. Bring to a boil, reduce to a simmer, cover, and cook for 15 minutes or until fluffy. Let sit covered for 5 more minutes. Fluff with a fork.
Grill the Salmon
Preheat your grill (or grill pan) to medium-high. Brush salmon with olive oil and season with salt and pepper.
Grill skin-side down for ~4–5 minutes. Flip, brush with BBQ sauce, and grill for another 3–4 minutes until cooked through and lightly caramelized. You can add more sauce during the final minute for extra stickiness.
Grill the Asparagus
Toss asparagus with olive oil, salt, and pepper. Grill for 2–3 minutes per side until just tender and slightly charred. Finish with a squeeze of lemon if you like.
Plate It Up
Serve the salmon over a bed of quinoa with grilled asparagus on the side. Spoon a little extra BBQ sauce on top if desired and garnish with fresh herbs or lemon zest.
