My favorite dish.
My MIL originally used tortillas on the bottom but we have 4 kids and found noodles to be more filling!
Quick and easy 1 pan bake!
Preheat to 350
Layer:
Salsa
Noodles (or tortillas)
Cooked ground beef, whole corn, and shredded cheese (mix together)
Top with can of cream of mushroom+milk to thin it some
cook until salsa starts to boil on the sides (25-30 min)
My family's go-to 'Mexican Mess' recipe is truly a lifesaver on those hectic weeknights, and I'm so excited to share more tips and tricks to make it even better for your crew! While the original recipe is fantastic for its simplicity, I've picked up a few things over time that really elevate this dish, making it a staple in our household. It's the kind of comfort food that feels like a cozy CAFE meal right at home, but without the fuss! First off, let's talk about the base. The original idea of using noodles for extra filling power is genius, especially with active kids! I usually opt for egg noodles or even rotini pasta, as they hold the sauce well. If you're feeling adventurous or have a pasta preference, elbow macaroni or even penne can work. And for those who prefer the traditional route or want a gluten-free option, corn tortillas are still a great choice – maybe layering them slightly overlapping to create a sturdier base. I've even tried a mix of both sometimes, using tortillas for the bottom layer and then adding some cooked noodles in the middle for that extra heartiness. When it comes to the meat, ground beef is classic, but don't be afraid to experiment! Ground turkey or chicken can make it a bit lighter, and I've even used seasoned black beans or a mix of beans and corn for a fantastic vegetarian version. For the seasoning, beyond just browning the meat, I often add a packet of taco seasoning or a blend of cumin, chili powder, and a pinch of smoked paprika. This really deepens the flavor and brings out those authentic Mexican notes that make this 'Mexican Mess' so delicious. While you're browning the meat, make sure to drain any excess fat – this prevents the dish from becoming greasy. Now, about the sauce! The cream of mushroom soup thinned with milk is a fantastic shortcut. However, if you're not a fan, I've found that a can of cream of chicken soup works just as well, or you could even go for a can of enchilada sauce mixed with a bit of sour cream for a tangier, richer flavor. Sometimes, I'll even stir in a spoonful of green chiles for a subtle kick without making it too spicy for the little ones. For an extra creamy texture, a dollop of cream cheese can transform the sauce into something truly decadent. Layering is key for an even bake. Make sure your noodles are spread out evenly so they can absorb all that delicious liquid. And don't skimp on the cheese! I love sharp cheddar, but a Mexican blend, Monterey Jack, or even a mix of cheeses can add different dimensions. I usually reserve about a quarter of the cheese to sprinkle on top during the last 5-10 minutes of baking, just to get that beautiful golden, bubbly crust. This also helps prevent the cheese from burning if you cook it too long from the start. Finally, serving! This Mexican Mess is already a complete meal, but toppings can take it to the next level. Think sour cream or Greek yogurt, fresh cilantro, diced avocado or guacamole, a squeeze of lime, or even some crushed tortilla chips for extra crunch. A simple side salad can also add a nice fresh contrast. It's a dish that's incredibly versatile and adaptable to whatever you have on hand, which is why it's become such a beloved recipe in our home. Enjoy making your own delicious 'Mexican Mess' – it's truly a dish that brings everyone to the table!
