Grilled Chicken Bowl with Corn, Jalapeños, and Creamy Sauce 🔥
Ingredients:
For the Chicken:
1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Corn:
2 cups frozen corn, thawed
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Garnish:
2 jalapeños, thinly sliced
For the Creamy Sauce:
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon lime juice
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions:
Marinate the Chicken: In a bowl, combine chicken cubes with olive oil, chili powder, garlic powder, salt, and pepper. Marinate for at least 30 minutes, or up to 2 hours.
Grill the Chicken: Preheat grill to medium-high heat. Grill the chicken cubes for 2-3 minutes per side, or until cooked through. Let rest for 5 minutes before slicing.
Cook the Corn: Heat olive oil in a skillet over medium heat. Add corn and cook for 5-7 minutes, or until tender-crisp. Season with garlic powder, salt, and pepper.
Make the Creamy Sauce: In a small bowl, whisk together mayonnaise, sour cream, lime juice, garlic, salt, and pepper.
Assemble the Bowls: Divide the corn among bowls. Top with grilled chicken and sliced jalapeños. Drizzle generously with the Creamy Sauce.
Tips:
You can use any type of chicken you like for this recipe.
For a spicier sauce, add a pinch of red pepper flakes to the Creamy Sauce.
