GARLIC BUTTER STEAK BITES WITH PARMESAN CREAM
E-Cookbook “Food is a Mood” 11.1.2024
Ingredients:
For the Garlic Butter Steak Bites:
1 pound steak (sirloin, ribeye, or tenderloin), cut into bite-sized cubes
4 cloves garlic, minced
Salt and pepper, to taste
1/4 teaspoon paprika
2 tablespoons olive oil
3 tablespoons butter
Fresh parsley, chopped, for garnish
For the Parmesan Cream Sauce:
1 tablespoon butter
2 cloves garlic, minced
1 cup heavy cream
3/4 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
Salt and pepper, to taste
Fresh parsley, for garnish
❗Instructions:
Cook the Steak Bites:
Season the steak cubes with salt, pepper, and paprika.
Heat olive oil in a large skillet over medium-high heat. Once hot, add the steak cubes in batches (do not overcrowd the pan) and cook for about 2-3 minutes per side, or until the steak is golden brown and cooked to your liking.
Remove the steak from the skillet and set aside.
In the same skillet, reduce the heat to medium, add butter and minced garlic. Sauté for 1-2 minutes until the garlic is fragrant. Add the steak bites back to the skillet and toss to coat them in the garlic butter. Set aside.
Prepare the Parmesan Cream Sauce:
In a separate skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the heavy cream and bring to a gentle simmer. Let it cook for about 3-4 minutes, stirring occasionally until it starts to thicken.
Stir in the grated Parmesan cheese and Italian seasoning. Season with salt and pepper to taste. Cook for another 2-3 minutes until the sauce is thick and creamy.

Hey foodies! I wanted to share some extra tips and tricks I've picked up for making these amazing Garlic Butter Steak Bites with Parmesan Cream Sauce truly shine. You know, sometimes a recipe looks gorgeous in a 'close-up shot,' but getting it just right at home takes a little extra know-how. First off, let's talk about those steak bites. The recipe suggests sirloin, ribeye, or tenderloin, which are all fantastic choices for tenderness. My personal go-to is often sirloin because it's flavorful and still really tender when cut into smaller pieces. For that perfect golden brown sear and juicy interior, the key is not to overcrowd your pan. Seriously, I've learned this the hard way! If you put too many steak bites in at once, the temperature of your pan drops, and they'll steam instead of sear. Work in batches, and make sure your pan is screaming hot with that olive oil before adding the steak. Cooking for just 2-3 minutes per side really is all it takes for a lovely medium-rare to medium, keeping them incredibly tender. Now, for the garlic butter part – this is where so much flavor comes from! When you add the butter and minced garlic back to the skillet after removing the steak, keep the heat on medium. You want the garlic to become fragrant and slightly golden, not burnt. Burnt garlic can turn bitter, and we definitely don't want that! Tossing the perfectly seared steak bites in this aromatic butter is pure magic. And oh, the Parmesan cream sauce! This sauce takes this dish from great to absolutely divine. To ensure it's beautifully creamy and smooth, start with good quality Parmesan cheese. Freshly grated is always best; pre-shredded often contains anti-caking agents that can make your sauce slightly grainy. When you're simmering the heavy cream, don't rush it. Let it gently thicken, stirring occasionally. Once you stir in the Parmesan and Italian seasoning, keep the heat low and stir until it melts right in, creating that luxurious, thick texture. If your sauce ever feels too thin, a tiny bit more Parmesan or a pinch of cornstarch slurry (mixed with a tablespoon of cold water) can help, but usually, just letting it simmer gently does the trick. To really make this dish picture-perfect, like those 'close-up' shots we all love, don't forget the garnish! A generous sprinkle of chopped fresh parsley not only adds a pop of color but also a fresh, herbaceous note that balances the richness of the steak and creamy Parmesan sauce. I also love serving these steak bites with some crusty bread to sop up every last drop of that amazing sauce, or alongside some simple roasted asparagus or mashed potatoes for a complete meal. Want to mix it up? Sometimes I'll add a splash of dry white wine to the cream sauce before adding the heavy cream – it adds another layer of depth. Or, if you like a little kick, a tiny pinch of red pepper flakes in the garlic butter can be fantastic. Experimenting is part of the fun! These little extra steps really make a difference and ensure your Garlic Butter Steak Bites are not just delicious but also look amazing, just like they came straight from a gourmet kitchen. Happy cooking!
