Texas-Style Rattlesnake Bites

Ingredients:

For the Rattlesnake Bites:

1 pound chicken breast or thigh meat, cut into small bite-sized pieces

1/2 cup diced jalapeños (seeds removed for less heat)

1/2 cup diced green bell pepper

1/2 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and freshly ground black pepper, to taste

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional for extra heat)

Vegetable oil for frying

For the Dipping Sauce (Optional):

1/2 cup ranch dressing

1 tablespoon hot sauce (or to taste)

Instructions:

Step 1: Prepare the Rattlesnake Bites Filling

Mix the filling:

In a large bowl, combine the chicken pieces, diced jalapeños, diced green bell pepper, shredded cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Stir until everything is well mixed and the chicken is evenly coated with the creamy filling.

Shape the bites:

Using your hands, form the mixture into small bite-sized balls or nuggets, about 1 to 1 1/2 inches in diameter.
