Chicken Taco Bowl with Pico de Gallo & Cheese

For the Chicken:

1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

2 tbsp olive oil

1 tsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp cayenne pepper (optional, for heat)

Salt & pepper, to taste

For the Pico de Gallo:

3 medium ripe tomatoes, diced

1 small white or red onion, finely chopped

1 jalapeño, seeded and minced 🌶️ (optional for spice)

1/4 cup fresh cilantro, chopped 🌿

Juice of 1 lime 🍋

Salt, to taste 🧂

For the Bowl:

2 cups cooked rice (white, brown, or cilantro lime rice)

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, canned, or thawed frozen)

1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Optional toppings: sliced avocado 🥑, sour cream or Greek yogurt, chopped green onions, lime wedges

Instructions

1. Prepare the Chicken 🍗
