Homemade Chipotle Chicken Bowls
Making bowls with double meat and double guac. Buying the same exact bowl at Chipotle costs more than $20. I made five bowls for less than $6 each. Enjoy!
Chipotle Chicken 🍗🌶️
Ingredients:
-3 lbs chicken thighs, boneless and skinless
-1 can of chipotle peppers in adobo sauce
-3 tbs avocado oil
-1 tbs onion powder
-1 tbs garlic powder
-1 tbs ground cumin
-1 tbs smoked paprika
-1 tbs dried oregano
-2 tsp salt
-2 tsp pepper
Instructions:
-add chicken to a bowl with oil, seasonings, and chipotle peppers; mix well
-marinade for at least 2 hours
-grill until internal temp is 165F
-rest for 10 minutes before cutting
Cilantro Lime Rice 🍚🌿🍋🟩
Ingredients:
-3 cups uncooked white rice
-5 cups chicken bone broth
-dried bay leaf
-3 limes
-1/2 cup of chopped cilantro
-salt to taste
-3 tbs avocado oil
Instructions:
-wash rice and add to rice cooker with broth
-add bay leaf and cook
-fluff and transfer to a bowl
-add oil, half of the cilantro and lime juice, and 1 tsp of salt; mix well
-taste the rice and adjust flavors if needed
Seasoned Black Beans 🫘🍃
Ingredients:
-2 cups of dried black beans
-4 cups of water
-1 tbs tomato paste
-2 tsp onion powder
-2 tsp garlic powder
-2 tsp paprika
-2 tsp ground cumin
-2 tsp dried oregano
-1 tsp salt
-1 tsp black pepper
-dried bay leaf
Instructions:
-wash beans and add into instant pot
-add seasonings; mix well
-pressure cook for 50 minutes
Pico de Gallo 🍅🌿
Ingredients:
-3 roma tomatoes, diced
-half of a red onion, diced
-1 jalapeño, diced
-salt, cilantro, and lime juice to taste
Corn Salsa 🌽
Ingredients:
-2 cups frozen white corn
-half of a red onion, diced
-1 jalapeño, diced
-salt, cilantro, and lime juice to taste
Fresh Guacamole 🥑

-3 ripe avocados
-half of a red onion, diced
-1 roma tomato, diced
