Homemade Chipotle Chicken Bowls
Sharing a healthy and high-protein chipotle chicken bowl recipe for your next meal prep or weeknight dinner! Buying one of these bowls at Chipotle would be almost $20. I made 5 of them at home in 90 minutes with $29 of ingredients, which comes out to $5.80 per bowl. If I can do it, so can you. Enjoy!

Chipotle Honey Chicken 🍗
Ingredients:
-3 lbs chicken thighs, boneless and skinless
-1 can chipotle peppers in adobo sauce (to reduce spiciness, do not add the whole peppers)
-1 tbs olive oil
-1 tbs honey
-1 tbs onion powder
-1 tbs garlic powder
-1 tbs ground cumin
-1 tbs smoked paprika
-1 tbs dried oregano
-1 tsp salt
-1 tsp pepper
Instructions:
-add chicken to a bowl with all ingredients; mix well
-marinate for at least 30 minutes up to overnight
-grill at 400F until internal temp is 165F
-rest for 10 minutes before cutting
Cilantro Lime Rice 🍚
Ingredients:
-2 1/2 cups chicken bone broth
-1 1/2 cups uncooked white rice, rinsed
-dried bay leaf
-2 limes
-1/2 cup of chopped cilantro
-salt to taste
-1 tsp olive oil
Instructions:
-add rice, broth, and bay leaf to rice cooker; cook until fluffy
-transfer to a bowl with the rest of the ingredients; gently toss together
-taste the rice and adjust if needed
Seasoned Black Beans 🫘
Ingredients:
-1 15-oz. can unsalted black beans, rinsed
-2 cups water
-1 tsp onion powder
-1 tsp garlic powder
-1 tsp paprika
-1 tsp ground cumin
-1 tsp dried oregano
-1/2 tsp salt
-1/2 tsp black pepper
-dried bay leaf
Instructions:
-add ingredients into small saucepan and mix well; cover and simmer on low for 10 min until tender
Pico de Gallo 🍅
Ingredients:
-3 roma tomatoes, diced
-half of an onion, diced
-1 jalapeño, diced
-salt, cilantro, and lime juice to taste
Corn Salsa 🌽
Ingredients:
-1 15-oz. can unsalted corn, rinsed
-half of an onion, diced
-1 jalapeño, diced
-salt, cilantro, and lime juice to taste
