It's more than just boiling pasta and mixing sauce; there are little things that make a huge difference! First off, let's talk about the meat. While ground beef is classic, don't be afraid to experiment! I sometimes use a mix of ground beef and Italian sausage (mild or hot, depending on my mood!). The sausage adds an incredible depth of flavor. When browning your meat, make sure to get a nice sear on it. Those browned bits sticking to the bottom of the pan? That's flavor gold! Deglaze with a splash of red wine or broth after cooking the meat and onions – it adds a richness you won't regret. For the sauce, I always start with good quality canned tomatoes. Crushed tomatoes are my go-to for a smoother sauce, but diced tomatoes can add a nice texture if you prefer. A little trick I learned is to add a pinch of sugar to balance the acidity of the tomatoes. It doesn't make it sweet, just rounds out the flavor beautifully. Herbs are key here! Fresh basil and oregano are fantastic, but dried works too. Don't be shy with garlic – I usually add more than the recipe calls for because, well, garlic! Let your sauce simmer for at least an hour, or even longer if you have time. The longer it simmers, the more the flavors meld and deepen. I often make a big batch on a Sunday and let it simmer all afternoon; the house smells amazing, and dinner is practically done! Now, for the spaghetti itself. If your sauce seems a little thick, that pasta water is a magical ingredient to loosen it up and help it cling to the pasta better. When it comes to serving, a sprinkle of freshly grated Parmesan cheese is non-negotiable for me. Sometimes I'll add a dollop of ricotta cheese for a creamy contrast. And a side of garlic bread?
