Greek Chicken Bowl w/ Crispy Smashed Potatoes 🥔✨

These greek chicken rice bowls are such a great healthy and nutritious lunch 🍴 They’re packed with protein and are a great option to help keep you full!

Recipe

1. Drizzle your tomatoes with olive oil, salt, and pepper. Roast in the oven at 350 for 20-25 minutes or cook on the stovetop over a lot heat stirring occasionally. Cook until your tomatoes are cooked to your liking.

2. To make the crispy smashed potatoes, boil a handful of baby gold potatoes in salted water. Once fork tender, remove from the heat and strain. Add your potatoes to a lined baking sheet. Using the back of a spoon, smash the potatoes down. Drizzle them with olive oil, salt, and pepper. Bake at 400 degrees for 15-20 minutes or until the potatoes are crispy.

3. Cook your rice according to the directions.

4. Toss your chicken tenders with olive oil, lemon juice, salt, pepper, and greek seasoning. Cook in a pan over medium heat until cooked through (165 degrees internally). Remove and let rest.

5. To make your sauce, combine 1/4 cup greek yogurt, 1 tablespoon olive oil, lemon juice, salt, pepper, and greek seasoning.

6. Dice up your red onion and cucumber into small pieces.

7. Assemble your bowl with rice, chicken, tomatoes, red onion, and cucumber. Drizzle with your sauce and top with feta cheese and crispy smashed potatoes.
