Yum fish
Yum Fish is a spicy menu that combines the fragrant crispness of fried fish with the sourness, spiciousness, sweetness, saltiness of yum juice and fresh vegetables, making it taste mellow and enjoyable. Suitable for rice or play.
🐟 raw materials:
2-3 single sunny fish (cut in half and fried until crispy)
1 alley onion
1 sliced tomato
1 slice of celery
Alley chili peppers 5-10 grains (as likes)
2 tablespoons fish sauce
2-3 tablespoons lemon juice
1 teaspoon sugar
🥣 How to do it:
Slit Fry: Bring the slices down, fry them in hot oil, centerfire until crispy outside soft in, rest the oil flakes, and tear them into fit pieces.
Make Yum Juice: Mix Fish Juice, Lemonade, Sugar Together, Taste to Sour Lead, Salty Sweet According
Mixing: Add chili peppers, alley onions, tomatoes, and celery to the yum juice. Mix gently.
Mix up the sliced fish: Put the fried sliced fish down gently (or pour the yum later to crisp the fish).
Serve: Serve on a dish. Serve with fresh vegetables or cucumbers. Eat with hot boiled rice is delicious.
✅ Tip:
Do not mingle crispy fish with yum for too long. Will make the fish sticky.
Use good quality single sunny fish to taste oily, not too salty.

ถ้าใครกำลังสงสัยว่า “ยำปลาสลิดใส่อะไรบ้าง” เราว่าหลักๆ คือ 2 ส่วน: ปลาสลิดทอดให้กรอบ กับเครื่องยำ+น้ำยำที่ต้องรสจัดพอดี พอทำเป็นแล้วเมนูนี้ทำไวมาก เหมาะทั้งเป็นกับข้าวและกับแกล้มเลย ของที่เราใส่ประจำ (ปรับได้ตามบ้าน) - ปลาสลิดแดดเดียวทอดกรอบ (ฉีกชิ้นพอดีคำ) - หอมใหญ่ซอย (ช่วยตัดความเค็มมันของปลา) - มะเขือเทศ (เพิ่มความฉ่ำ ไม่ให้ยำแห้ง) - ขึ้นฉ่าย (กลิ่นหอม ทำให้ยำสดชื่น) - พริกขี้หนูซอย (เผ็ดตามชอบ) อยากเพิ่มความกรุบ/ความหอม สามารถใส่ได้อีก - มะม่วงดิบซอยหรือแอปเปิลเขียว (เพิ่มเปรี้ยวกรอบ) - ถั่วลิสงคั่วหรือเม็ดมะม่วงหิมพานต์ (เพิ่มความมัน) - หอมแดงซอยแทนหอมใหญ่ (กลิ่นคนละแบบ) - น้ำพริกเผาเล็กน้อย (ให้สีสวยและหอมหวานเผ็ด) สัดส่วนน้ำยำแบบที่ทำแล้วไม่พลาด เราชอบเริ่มจาก “เปรี้ยวนำ เค็มตาม หวานตัด” - น้ำปลา 2 ช้อนโต๊ะ - น้ำมะนาว 2–3 ช้อนโต๊ะ (ค่อยๆ เติม ชิมก่อน) - น้ำตาลทราย 1 ช้อนชา คนให้น้ำตาลละลายแล้วชิม ถ้าปลาสลิดที่ใช้เค็มมาก ให้ลดน้ำปลาและเพิ่มมะนาวนิดหน่อย จะบาลานซ์กว่า ทริกสำคัญให้ปลาสลิดยังกรอบ - ทอดไฟกลางจนเหลืองกรอบ แล้วพักบนตะแกรง/กระดาษซับมันให้ไอน้ำระเหยก่อนฉีก - แยก “น้ำยำ” ไว้ แล้วค่อยราดตอนจะกิน หรือคลุกเร็วๆ แค่พอเข้ากัน อย่าทิ้งไว้นาน ปลาจะเหนียว - ถ้าทำไว้ล่วงหน้า ให้เตรียมเครื่องยำกับน้ำยำแยกกล่อง พอถึงเวลากินค่อยประกอบ จะอร่อยสุด ไอเดียเสิร์ฟให้อร่อยขึ้น เราชอบกินยำปลาสลิดกับแตงกวา ผักสด หรือข้าวต้มร้อนๆ มากๆ เพราะช่วยตัดรสจัดได้ดี ใครอยากเฮลท์ตี้หน่อยใช้ข้าวกล้องหรือไรซ์เบอร์รี่ก็เข้ากัน ทำตามนี้จะได้ “ยำปลาสลิด” รสแซ่บ หอมปลา กรอบกำลังดี และรู้เลยว่าเมนูนี้ใส่อะไรบ้างแบบครบๆ ปรับได้ตามของที่มีในครัวค่ะ
