Ingredients
12 brioche slider rolls
1 lb boneless chicken (diced)
1 tablespoon oil
1 small onion (sliced)
2–3 bell peppers, sliced
6–8 slices mozzarella cheese
1 to 1½ cups shredded cheddar cheese
For the chicken marinade
1 tablespoon oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon cumin
½ teaspoon chili powder
1 tablespoon lime juice (optional)
For the topping
3 tablespoons butter (melted)
1 teaspoon garlic powder
1 teaspoon dried parsley
Recipe
Start by marinating the chicken with oil, salt, black pepper, paprika, garlic powder, cumin, chili powder, and lime juice. Mix well and let it sit for 15–30 minutes.
Heat oil in a pan over medium heat and cook the chicken until fully cooked and slightly golden. Remove from the pan and set aside.
In the same pan, add onions and bell peppers. Cook until soft and slightly caramelized, then add the chicken back in and mix everything well.
Slice the brioche rolls in half and place the bottom layer in a baking dish. Add mozzarella cheese slices, then the chicken fajita mixture, then top with cheddar cheese. Close with the top buns.
Brush with melted butter mixed with garlic powder and parsley.
Bake at 350°F for 10–12 minutes until golden and melty.
