🌶️ Cajun Shrimp Cucumber Bites

Ingredients
* 24 medium cooked shrimp, peeled and deveined
* 2 large English cucumbers
* 4 oz cream cheese, softened
* 2 tbsp mayonnaise
* 1 tsp Dijon mustard
* 1 tsp Cajun seasoning, plus extra for the shrimp
* ½ tsp garlic powder
* 1 tsp fresh lemon juice
* 1 tbsp chopped fresh parsley
* 2 green onions, finely sliced
* Salt and black pepper to taste
Instructions
1. Slice the cucumbers into ½-inch thick rounds.
2. In a small bowl, mix the cream cheese, mayonnaise, Dijon mustard, Cajun seasoning, garlic powder, lemon juice, parsley, and half of the green onions until smooth.
3. Pat the shrimp dry and lightly toss with an extra sprinkle of Cajun seasoning.
4. Spoon or pipe a small amount of the cream cheese mixture onto each cucumber slice.
5. Top each bite with one Cajun shrimp.
6. Garnish with the remaining green onions and a light sprinkle of parsley.
7. Chill for 10 minutes before serving for the best flavor.
Chef’s Tip
For an extra pop of color and flavor, add a tiny piece of diced red bell pepper or a small pinch of smoked paprika on top just before serving.
