I’ve experimented with so many recipes, and this 'Seafood Boil Stir-Fried Rice' version is my absolute favorite. It’s surprisingly simple to make, yet tastes like you spent hours in the kitchen. Seriously, if you're looking for a stand-alone dish that’s a guaranteed crowd-pleaser or just a comforting meal for yourself, this is it. Forget complicated starters; this rice dish is a complete flavor explosion! Here’s what you’ll need to whip up this incredible dish: 1 lb colossal shrimp, peeled and deveined (reserve shells if making stock) 8 oz andouille sausage, sliced 2 cups cooked rice (day-old is best for stir-fry!) 1/2 cup unsalted butter 1 large onion, diced 4 cloves garlic, minced 1-2 habanero peppers, finely minced (adjust to your spice preference!) 1 red bell pepper, diced 1 green bell pepper, diced 1 carrot, finely diced 1 cup sweet corn (frozen or fresh) 1 small Irish potato, finely diced (adds a lovely texture!) 2 tsp smoked paprika 1/4 cup lemon juice 1/4 cup white wine (optional, but adds depth!)
