Egg Roll in a Bowl!! Low Carb
Egg roll in a bowl is a staple in our home. This is one of the easiest meals and it can be done in 30 minutes.
Sometimes we eat this in lettuce wraps but it’s also great in a tortilla as well.
You can add in veggies, onions, and a side of rice!! Make this recipe your own.
1lb ground meat - you can use pork, chicken, turkey, beef
Veggie Slaw
Broccoli or any other veggie
Teriyaki marinade
Soy Sauce
Ginger Paste
Garlic Powder
Pepper
Sesame Oil
Sesame seeds (optional)
Olive oil
1-2 eggs (no need to dirty another pan, use the same pan but add the eggs at the end so they don’t overcook.
Add sesame oil and enjoy!
Directions
Brown the meat
Heat olive oil in a large skillet over medium heat. Add ground meat, salt, and pepper. Cook until browned.
Add flavor
Stir in garlic and ginger. Cook 30 seconds until fragrant.
Add veggies
Add the coleslaw mix. Stir and cook until cabbage softens. If using Broccoli add that in halfway through browning the meat. Broccoli takes longer to cook.
Season
Pour in soy sauce, Teriyaki sauce and sesame oil. Stir well and cook a few more minutes.
Serve
Taste and adjust seasoning. Top with green onions, sesame seeds, or sriracha
